Roasted Cauliflower Taco w/ Cucumber & Tomato Salsa

I made these tacos because I had left over cauliflower and I absolutely love tacos. The recipe is simple…. I do not measure my ingredients so you will have to eyeball everything lol.


Ingredients:

Cauliflower

Fresh chopped Garlic

Fresh chopped chives

Magic Salt Free Seasoning

Cummin

1 TBS Harissa Paste – I found this at Trader Joes but Amazon has it too

Pink Himalayan Sea Salt

Garlic Powder

English Cucumbers

Grape or Cherry Tomatoes

½ Red Onion

1 Lime

Corn or Flour Tortillas

Grape Seed Oil spray

Chipotle Aioli

Shredded Cabbage

Cilantro


Preheat the oven to 400 degrees. Line a pan with Parchment paper. In a large bowl mix your Cauliflower, garlic, chives, Magic seasoning, cumin, Harissa Paste, salt and garlic powder. Completely cover your cauliflower with the seasoning. Put the cauliflower on the pan lined with parchment paper. Put it in the oven bake for 30-40 minutes.





While the cauliflower is in the oven, chop up the red onion, tomatoes and cucumbers and mix in a bowl. Remove the seeds from the cucumber. Squeeze one lime over the salsa mix and set to the side.





Spray a pan with the grape seed oil and lightly fry your tortillas.


Remove the cauliflower from the oven and assemble your tacos!! Put the cauliflower inside of the tortilla then the chipotle aioli, salsa, cilantro and shredded cabbage. If you like lime squeeze some lime on your taco and ENJOY!!
